Beet Albino
'Albino' (Fig. 1) White root, sweet flavor, edible greens. A beet variety from Holland. Completely white sweet roots with delicious flavor. This beet never stains! For best color and to avoid green tops, blanch roots by hilling up with soil. 50 days, ±1,400 seeds/oz. 2

'Alvro Mono' A smooth-skinned beet with deep, solid red flesh and tender green tops. This uniform variety matures slightly earlier and develops a single root for easier, more precise seeding. 5

Beet bull's bood
'Bull's Blood' (Fig. 6) Organic, red-purple leaves, sweet flavor, can be grown for salad leaves. A cool-weather plant that is as ornamental as it is tasty. This purple-foliaged variety can be used to produce two great crops for eating. The deliciously sweet leaves are perfect for adding to salads, but the variety can also be grown for its delectable baby roots. We suggest picking the leaves at about 35 days. Selected by Dutch seedsman and Seed Savers Exchange member Kees Sahin in 1986 from the French variety Crapaudine for the darkest-colored leaves. 35 days for baby leaf tops, 55 days for edible roots. ±1,300 seeds/oz. 2 Makes an excellent food dye.
Beet Burpee's Golden
'Burpee's Golden' (Fig. 7) Organic, bright orange roots, extremely tender, can be grown for salad leaves. A standout beet, offering both excellent roots and sweet, flavorful, edible greens that are ideal for sautéeing. Introduced in 1970 by Burpee Seed Company, it has orange, globe-shaped roots that turn golden yellow when cooked, are tender and mild-flavored (even when large), and will not bleed like red beets. 50-55 days. ±1,600 seeds/oz. 2

'Burpee White' - Breeder and vendor: W. Atlee Burpee Company, Philadelphia. Characteristics: white roots, top shaped with rather coarse rattail, green tops, flesh white with sweetest taste of any table beet. Burpee Catalog, 1952. 1

'Cardenal' - Breeder and vendor: Petoseed. Parentage: line selection over years out of 'Ruby Queen'. Characteristics: open pollinated, early maturing; for bunching, processing, home garden; tops 10 to 12″ tall, fiber-free, smooth root, keeps shape well; very good interior color even under stress conditions. Adaptation: wide. 1978. 1

'Centurion' (PS 589) - Breeder and vendor: Seminis Vegetable Seeds-Petoseed. Parentage: F1 hybrid. Characteristics: bunching, tops 12 to 14 inches tall, round shape, clean leaves, early maturity, blood red interior color, does not bleed. Similar: 'Little Ball'. Adaptation: U.S., France. 1999. 1

Characteristics: processing, bunching, upright foliage, blood red interior, medium tall, globe shaped top, uniform smooth crowns, late maturity. Similar: 'Red Ace'. 'Chicago Red' - Breeder: Burpee. Characteristics: purple red, roots elongated, extra sweet. 1
Beet Chioggia
'Chioggia' (Fig. 8) Characteristics: flattened globe shape, medium green leaf, zoned purple and white bullseye appearance, novelty color. Resistance: high tolerance to bolting. 1
Organic, good for fresh eating and pickling, alternating red and white rings, sweet flavor. Also known as 'Bassano', and noted for its alternating red-and-white concentric rings that resemble a bull's-eye, 'Chioggia' beets are wonderful for both fresh eating and pickling. It retains its markings if roasted whole and sliced just before serving. Named for a fishing town near Venice, this historical Italian variety has been grown in the United States since at least 1865. 50 days. ±2,300 seeds/oz. 2

'Crosbys Egyptian' - Characteristics: top shape, dark red interior, dark green matte leaf, early maturity. Resistance: low tolerance to bolting 1
Beet Cylindra
'Cylindra' (Fig. 9) Characteristics: blunt cylinder, purple-dark red interior, dark green matte leaf, high yield. Resistance: tolerance to downy mildew, moderate tolerance to bolting. 1 Dark red root, elongated shape, easy to peel, sweet flavor. The elongated 5-6" roots of this Danish variety resemble a carrot in shape, which allows gardeners to plant its seeds closer together than globe-shaped beet varieties. The edible roots can be sliced into uniform round slices and have an enticing fine-grained texture. Additionally, this easy-to peel beet has sweet dark-red flesh that’s free from rings, making this variety an excellent choice for pickling, baking, roasting, and steaming. 46-80 days. ±2,300 seeds/oz. 2

'Cyndor' - Characteristics: blunt cylinder, dark red interior, medium green matte leaf, resists curved root. Resistance: high tolerance to bolting. 1

Beet Detroit Dark Red
'Detroit Dark Red' (Fig. 10) Characteristics: globe, dark red interior, dark green matte leaf, multipurpose beet. Resistance: high tolerance to bolting, tolerance to Cercospora leaf spot, moderate tolerance to downy mildew. Adaptation: wide. 1
Organic, very dark red color, prolific, stores well. Great for canning and fresh eating, this variety is a good keeper, producing round, blood-red, 3"-diameter roots. This historic variety was introduced in 1892 by D. M. Ferry & Company. Original selections were made from the 'Early Blood Turnip' beet by Mr. Reeves of Port Hope, Ontario, Canada. 60-65 days. ±1,700 seeds/oz. 2

'Detroit Red' A true heirloom dating back to 1892. The standard in canned beets for more than 100 years. Does surprisingly well in the desert. Deep-red, 3" globes store well. Delicious, 12-15" dark-green tops. 4

'Detroit Short Top' - Characteristics: globe, purple interior, medium dark green glossy leaf, strong tops. Resistance: moderate tolerance to downy mildew, moderate bolting tolerance. 1

Beet Early Blood Turnip
'Early Blood Turnip' (Fig. 12) Very dark red color, crisp and tender, excellent market and home garden variety, for summer and autumn use. Available as early as 1825 from seedsmen such as Sinclair & Moore of Baltimore, MD. Good all purpose variety with dark red flesh that is sweet, crisp, and tender. Excellent market and home garden variety for summer and autumn use. Now relatively rare. 48-68 days. ±2,500 seeds/oz. 2

'Early Wonder
' 45-50 days from planting; selected about 100 years ago from Crosby Egyptian for earliness and vigorous, lush top growth making it a great choice for early beet greens. Produces deep-red 3-4", exceptionally sweet globes. Organically grown seed. 4

'Early Wonder Staysgreen' - Breeder: Northrup King and Co. Parentage: selection from Early Wonder. Characteristics: selected for improved leaf color; leaves stay green longer during cool weather than other cultivars. Similar: Early Wonder. 1961. 1

'Early Wonder Tall Top' - Characteristics: flat globe, medium red interior, medium green slightly glossy leaf, durable tops, low bolting tolerance. 1

'Eastern Wonder' - Breeder and vendor: Eastern States Farmers Exchange, West Springfield, Massachusetts. Parentage: three roots selected from 'Asgrow Wonder' followed by intensive reselection. Characteristics: flat globe root, fine tap root, medium to small collar, uniform interior color, medium tall tops. Similar: 'Early Wonder'. Adaptation: sandy loam to medium loam soils. 'Egyptian Blood Turnip'

'Etna' (PS 2189) - Breeder and vendor: Seminis Vegetable Seeds. Parentage: hybrid.
Characteristics: dull, glossy green leaves; 14 to 16 inches tall; very strong leaf attachment for easy pulling; nice blood red interior color; excellent round shape for small beet processors; early maturity. Similar: 'Little Ball', 'Red Ace'. Adaptation: NAFTA. 2005. 1

'Golden' Breeder and vendor: W. Atlee Burpee Co. Characteristics: open pollinated, bright golden color with deep yellow flesh that does not bleed like red beets; tops are excellent cooked greens. Similar: 'Crosbys Egyptian'. Adaptation: wide. 1970. 1
Mature in 55-60 days from planting. Developed by W. Atlee Burpee Seeds in the 1940's. Produces an orange-skinned, golden yellow-fleshed root with pleasant, sweet flavor that is milder than red beets. Best eaten when roots are 2" in diameter. Organically grown. Approx. 3g/200 seeds per packet. 4

'Sugar Beet' (Fig. 21) A biennial root crop. It produces sugar during the first year of growth in order to see it over the winter and then flowers and seeds in the second year. 'Yellow Intermediate Mangel Beet' (Fig. 24) Organic. Winner of our 2015 beet evaluation for taste. White- and yellow-ringed roots measure 4-6½" long and vary in shape. While mangel and fodder beets are larger than typical beets and were traditionally used for animal feed, you’ll find the sweet, juicy, and smooth-textured roots are prime for the dinner table and not just the barnyard. Seed Savers Exchange’s seed stock was originally acquired from Dr. Alan Kapuler of Peace Seeds in the 1980s. 65-100 days. 2
